SAUCE:

1/2 cup chopped scallions

4 Tbl spoons blackening seasoning

1 stick butter

Steps:

Place a 9 inch pan on medium heat , melt stick of butter, add scallions, blackening seasoning, slowly add cream while constantly stirring. Its of if the sauce bubbles, just keep stirring. Sauce is done when it thickens up.

MEDLEY SIDE:

2 cans whole kernel corn

1/2 cup chopped cilantro

1/4 cup chopped scallions

10 chery tomatoes sliced

2 avacadoes diced

1/4 cup key lime juice

FISH:

Take you fillets and heavily blacken them

turn your Traeger to its highest temp.

We used a “Ranger” which gets up to 450 degrees.

Lay a stick of butter down. Soon as it begins to melt, lay your fish on top. Do not move your fish till it is 3/4 of the way done.

Flip your fish one time to finish the cook on the other side.

Do the same to your shrimp.

Plate, and watch your friends enjoy your easy masterpiece.
